THE PURPOSE FOR CHOCOLATE TEMPERING


Tempering is the process required to all chocolate using pure cocoa butter, after tempering,the shine and smooth will make your chocolate with better taste and it becomes irresistible.

When couverture chocolate is melted, the cocoa butter molecules will become unstable. By tempering, you rebuild the cocoa butter crystals. There are multiple ways to temper chocolate ,in the microwave, oven,etc but the most efficient and convenient way is to use a tempering machine, which is the significance for the existing of our tempering machine. When it starts melting,the machine will automatically keep temperature at 55℃. After fully melted, heating system will stop working, then temperature drops to 28℃ and keep at 31℃ for further usage(depending on different chocolate).

MACHINE DESCRIPTIONchocolate world tempering equipment

Our industrial tempering machine has the function for melting and tempering. It is with heating system and cooling system with refrigerant compressor. The tank capacity can be made with options from 25L to 100L depending on your own needs, so it reaches from 80kg/h to 300kg/h. The tank is equipped with a mixer that keeps the chocolate fluid and it is made of food grade stainless steel.

With the temperature probe, the temperature can be precisely detected. There is PLC control system, and the operation is super easy.

There is a stopping pedal underneath, so you can take the the dosing as much as you need each time. Moreover the chocolate flow is adjustable.
