What Does The Percentage Number Mean On The Chocolate Package?

When you buy chocolate, you will often see the percentage on the package. Do you know what does this number mean?

Some people might think it's the cocoa butter content. However the percentage here is actually the "cocoa content," means the amount of cocoa solids, which is the sum of all the cocoa components in chocolate. Cocoa solids include cocoa mass, cocoa butter and cocoa powder.

For example, a piece of 70% chocolate consists of 40% cocoa mass and 30% cocoa butter, the remaining is sugar and non-cocoa ingredients. Therefore, it is a DARK chocolate bar with 70% cacao content. Chocolate with a high cacao content gives us the rich aroma of cacao.


Unlike dark chocolate, which is slightly bitter in the mouth, people use  milk powder to replace cocoa , so it shows light brown color. When the cocoa butter and cocoa cubes are reduced to 40%, this is a MILK chocolate with 40% cocoa.

White chocolate contains more milk, there is no cocoa cubes and cocoa powder, which is dark brown color. So there is no cocoa flavor in WHITE chocolate, just cocoa butter. So white chocolate has a natural milky color. Therefore,  cocoa content in white chocolate equals to cocoa butter content.
